This is a great lunch box treat as there are no nuts, and kids love it!

  • 1 medium sweet potato – 2 to 3 cups when grated

  • 2 eggs

  • ½ cup melted coconut oil

  • 1/3 cup honey

  • 2 teaspoons of vanilla extract (or vanilla bean paste)

  • ½ cup of raw cocao powder (can reduce amount if want a milder cocao flavour)

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2½ tablespoons coconut flour. Too much coconut flour will result in a drier brownie.  Can use an alternative flour if need to.

  • Preheat oven to 180 degrees.

  • Combine all dry ingredients and mix. Combine all wet ingredients and mix. Combine dry and wet ingredients together. Pour the mixture into a baking tray lined with greased baking paper.

  • Cook for approximately 25 minutes. Cool for 10 minutes before removing from tin. Cut into squares.
