GLUTEN-FREE, NUT-FREE, KID-FRIENDLY CHOCOLATE BROWNIES
This is a great lunch box treat as there are no nuts, and kids love it!
Ingredients:

1 medium sweet potato – 2 to 3 cups when grated

2 eggs

½ cup melted coconut oil

1/3 cup honey

2 teaspoons of vanilla extract (or vanilla bean paste)

½ cup of raw cocao powder (can reduce amount if want a milder cocao flavour)

1 tsp baking powder

1 tsp baking soda

2½ tablespoons coconut flour. Too much coconut flour will result in a drier brownie. Can use an alternative flour if need to.
Method:

Preheat oven to 180 degrees.

Combine all dry ingredients and mix. Combine all wet ingredients and mix. Combine dry and wet ingredients together. Pour the mixture into a baking tray lined with greased baking paper.

Cook for approximately 25 minutes. Cool for 10 minutes before removing from tin. Cut into squares.
